Sashimi made of fresh Hiramasa/Yellowtailkingfish


Starter menu – 4 persons
200 grams of Hiramasa, Yellowtail Kingfish (loin preferred)


1/2 hour + (1 hour freeze before cutting)

Slice the fish in 5mm slices in one cut to ensure best texture of the meat.

Place on a plate and arrange with any kind of fresh shoots. Pee/radish.

On the side wasabi, soja and pickled ginger. if you need crisp – toasted ry bread.
