Ikijime
Ikejime (活け締め) or Ikijime (活き締め) is a method of slaughtering fish to maintain the quality of its meat. The technique originated in Japan but is now in widespread use.
How we do:
We cut nerve connecting brain and spinal cord of the fish in order to stop the survival signal from the brain to the body. We do this immediately after taking out of water. At the same time, we cut gills of the fish for a proper bleeding process.
After this method, the fish will still be alive, but gets calm and without any stress or damage, it will push out all the blood.
There is a scienticfic reason why this would be better way to maintain quality and taste reference. Ikijime method will remain more ATP, adenosine triphosphate, and this is also related to amount of amino acid which comes out later, which will make fish tasty.
